Training Update: Rail Trail Run

A typical Sunday morning for us (when we're not racing) starts off with a long run. Today we decided to go flat for the run since it involved some pretty challenging, at least on paper, intervals. Laurel broke out a pair of new Nike LunarEclipse running shoes for the occasion. Since my workout was shorter than Laurel's I hopped on my mountain bike and paced her through her last few intervals. I rode just over 5:20 pace and she stuck to me like glue! My running pace is down to my high school dual meet 3200m speed, but improving with every run.

Foto Friday: Mother's day edition

After a couple busy days without access to the computer I decided to post this week's Foto Friday on Mother's Day.  I have noticed an increase in flower photos and springtime landscapes in the Instagram feed this week and it seemed very feminine and fitting for the holiday. Everyone one seems to be snapping pics of something pastel colored - peonies, denim, smoothies.

Oats of the Week: Coconut Milk & Mango

The Mix: fresh mango, coconut milk, toasted coconut, and chopped walnuts

The Story: I stocked up on sweet and deliciously un-local Ataulfo mangos from Mexico at the Trader Joe's last week. Laurel and I are eating them every which way. We snack on slices right off the cutting board in the afternoon.

Wild Spring Onions

 

Clumps of wild spring onions have popped up in our yard the last few weeks. They shoot up about a foot or higher and resemble weeds, but smell like onions. I pulled some up Friday night and wasn't sure what to do with them. I asked Melissa for her thoughts, and she sent me the link to this enticing spring onion and asparagus soup. Since I was preparing a pre-race meal for John's 5-mile trail race, I applied the flavor-combo to pasta. I chopped up some of the onions and sautéed them with chopped asparagus. Then I tossed the mixture with gluten-free spaghetti. The next morning, the rest of the onions added flavor to a big post-race tomato & cheddar omelet.  --Bec

Bridge 2 Bridge 5-Miler

Since I didn't make the trip to Knoxville for the Rev3 Race (still waiting on the broken toe), I went to watch the Bridge 2 Bridge 5 mile trail race at the Mohonk Preserve. Chis Pannone from NYAC won the race in just over 26 minutes. David Martinelli (in blue) was 4th in 30:40 and SJ (in the Rudy Project glasses) was 5th in 32:05.

Foto Friday: G-Free and a tall tree

There are so many great images out there - it's getting hard to narrow it down to just two images.  But, I suppose that is part of the challenge.  The first photo is a nice little still-life of some Gluten Free Pretzels taken by @athletefood.  Yes, they have been selected again.  Not playing sister favorites, but I love the palette, pale light and how great is it that GF people get to eat this lovely sweet salty bite of goodness?  After the race Sunday, I congratulated Tim O'Donnell on his fantastic third place finish and he said - it's all about the Gluten Free.  (Athlete Food will address this in a post soon, but in the meantime must get TO some of these pretzels!).  

The next photo was taken by @brando_kalpisian  He was a photo assistant on our Nike Swim shoot and introduced me to various iphone photo apps.  I love this picture of this giant tree.  It's so rich and lush and I feel like I can imagine myself standing there in a rain jacket breathing in the misty forest air.  Hard to believe a phone took this picture!-Laurel
